The much anticipated opening of the newest food chain to grace Eagle Pass with excellent customer service and a wide array of delicious cuisine got underway this Wednesday morning as Luby's in conjunction with The Eagle Pass Chamber of Commerce hosted local dignitaries as well as local business representatives and the media to the first look at the new location.

Maverick County Commisioners Jerry Morales, Asalia Casares, Roberto Ruiz were on hand along with Joe Ornelas representing the office of State Rep. Poncho Nevarez. Also in attendance were Roberto Mireles, Martha Garcia, Humberto "Beto" Garza, Mr. Kendell Scott, Alma Velasquez, Mr. Ruben Herrera, Chamber of Commerce Executive Director Sandra Martinez who always does a tremendous job of organizing these events and Sandra Ruiz Rodriguez who emceed the ribbon cutting event. Assistant Superintendent Samuel Mijares was also present representing the Eagle Pass Independent School District.

Luby's Cafeteria located in front of Lowe's on Bibb St. is fully equipped to accommodate approximately 260 patrons and will employ about 130 staff members.

Luby's has been in business for over 65 years and is proud to forge a unique relationship with its customers which they are sure to do with Eagle Passans and residents from our sister city of Piedras Negras.

Area Vice President Trent Taylor was on hand to introduce his team and the new location. The Eagle Pass location is the 94th site for this growing corporation with the 95th close behind slated to open in Austin very soon.

Mr. Taylor thanked our city officials and employees and saluted the local workforce commission for their work ethic and diligence in this project.

Also present at the ribbon cutting was the Resident Management Team Tony Aviña, Jose Covarrubias, Lynn Johnson, Austin Caldwell, Jesse Martinez, Carlos Rodriguez, John Rodriguez, Ruben Gandra and Area Leader William Pennel.

Mr. Taylor finalized with heart-felt appreciation to the local communities of Eagle Pass and Piedras Negras in this long lasting partnership.

Mayor Cantu shared some words with the eager crowd and forewarned the Luby's representatives that they would have record sales numbers here in Eagle Pass with the support of our residents as well as those from our neighbors. Mayor Cantu also mentioned that he remembers traveling to San Antonio to indulge in Luby's signature dishes and is certain that locals will be hard pressed to think of an excuse to travel to San Antonio now that our city can offer this excellent dining experience. A sentiment that was shared by Mexican Consulate Mr. Ismael Naveja Macias who eloquently expressed his excitement in the tremendous growth that he sees along our border benefiting both our cities.

The new Luby's sits in a prime location and is a beautiful building that assuredly will add to the hustle and bustle of Bibb Street near Wal Mart and Lowe's.

The lobby as well as the open kitchen is everything that was hoped for boasting a clean spacious eating area that is aesthetically pleasing as well. The food also left all of the lucky invitees with happy hearts as they had the choice of choosing from a plethora of delicious entrees, fresh salads, a variety of sides, and most importantly those delicious desserts.

Luby's Cafetaria is now open to the public and ready to treat you to a fulfilling dining experience.
